2 cans Swanson's chunk chicken
3 Tbsp. lemon juice
1/4 cup green onions, chopped
1/4 cup celery, chopped
1/2 cup nuts, broken into pieces (walnuts or pecans)
1/2 cup seedless red grapes, halved
Pinch of salt
1 Tsp. poppy seeds (optional)
1/4 cup raisins (optional)
1/2 cup mayonnaise (enough to make creamy - NOT salad dressing)
Drain chicken and break into
smaller chunks.
Spread lemon juice over chicken.
Sprinkle with salt and poppy seeds.
Add green onions, celery, nuts, grapes, raisins.
Toss together with mayonnaise.
Chill for at least 1/2 hour before serving.
Serves 6-8.
Note: This recipe tastes even
better the next day!
