Cheesy Potatoes
12 medium new red potatoes, with
skins
1 cup (or more) grated medium cheddar cheese
1 stick melted butter
8 slices crumbled bacon, cooked
Salt and pepper to taste
Cut potatoes into 1/2-inch thick slices. Cook in water until
done. Drain.
In casserole dish, layer potatoes, cheese, bacon and melted
butter.
Season with salt and pepper, to taste.
Heat in oven until cheese is hot and casserole is bubbly.
